Hygiene and slip resistance are non negotiable here, and mops often push contaminants from behind cases onto the open floor.
Back of house. Receiving docks, storage, and prep rooms suffer pallet jack point loads, harsh cleaners, occasional dropped knives or tools, and thermal shocks from hot washdowns. Joints, cove bases, and drains take a beating.

Quarry tile and porcelain. In kitchens and dish areas, quarry tile with an epoxy grout remains a solid choice. It withstands heat and harsh cleaning, and if a tile cracks, it is replaceable. The catch is grout maintenance. Even with epoxy, grout lines collect debris and can darken if cleaning tools do not agitate them. There are hybrids, of course. Some chains run polished concrete in the center, resinous urethane at wet perimeters, rubber near checkouts, and sheet vinyl or tile in bakery and floral. This mixed approach keeps each zone within its ideal conditions while maintaining a consistent look with color and sheen choices.
The cart is part of the floor

Details to attend to during design and installation matter as much as the material. If you use sheet goods, insist on heat welded seams and inspect them under strong light before acceptance. If epoxy grout is specified, confirm real epoxy, not a hybrid, and protect the cure phase from early traffic. Where trench drains sit in resinous floors, choose stainless bodies with wide flanges so installers can tie the coves in cleanly. Coordinate refrigeration contractors so condensate lines drip into proper pans or drains, not onto the floor behind cases.
I favor mockups. Install a ten by ten foot sample in a back room, complete with cove, drain, and transitions. Then have the intended cleaning crew wash it for a week with the actual machines and chemicals. You will discover more in that one week than in hours of meetings.
Cleaning that fits the floor and the schedule

It is tempting to shop by initial bid. Stores feel the budget pressure and installation windows are tight. The cheapest material, poorly installed and badly maintained, quickly becomes the most expensive because it steals labor every night, invites injuries, and needs replacement long before its time.
When I prepare a lifecycle model, I include initial material and installation, subfloor prep, moisture mitigation, expected maintenance labor and chemicals per square foot per year, equipment depreciation for scrubbers and burnishers, and a realistic refresh or replacement cycle. Managing moisture from below and above
